
Ingredients:
1 recipe basic arepa dough*
2 tablespoons oil
½ pound ground beef
½ pound ground pork
½ cup onion - chopped
3 cloves garlic - minced
¼ cup green chile - chopped
1 6-ounce can diced tomatoes
½ teaspoon achiote powder
½ teaspoon ground cumin
¼ teaspoon thyme leaves
¼ teaspoon black pepper
1 teaspoon salt
8 pimento-stuffed olives - sliced
1 tablespoon capers
Heat oil in a heavy skillet over medium heat then add meat, onions, garlic, green chile, tomato, achiote, cumin, thyme, black pepper and salt. Stir fry for 20 minutes or until a thick sauce is formed. Stir in olives and capers. Set aside.
To prepare arepas, take a small ball of the dough, shape into 3-inch discs (3/4-inch thick), Fry until golden brown, turning regularly. Remove from oil and place on paper towels, let cool slightly. When done, split in half, fill with meat sauce and serve hot.
Ingredients:
2 cups coarsely ground corn flour
1 egg yolk
3 cups water
1 teaspoon salt
oil (for deep frying)
Preheat a deep fryer to 350º F, (or use a deep frying pan filled with oil).
In medium sized bowl, mix the water and the egg yolk. In a large bowl add the flour then the egg/water mixture. Mix and kneed the dough for about 5 minutes until it is compact.
Cover with a damp cloth and set aside for 5 minutes.
