Pecorino Cheese and Fava Bean Salad

(Insalata Di Pecorino Con Le Fave)

 

Ingredients:
3 pounds young tender fava (broad) beans
6 slices course country bread - 1/2 inch thick each
1 clove garlic
10 ounces slightly aged pecorino cheese - diced
salt and freshly ground pepper
1/2 cup extra-virgin olive oil

Preheat a broiler.

Shell the fava beans. Place in a bowl and set aside.

To prepare the bread place the slices on a cookie sheet or broiler pan. Broil, turning once, until lightly golden on both sides. Remove from broiler. (A toaster oven works nicely as well) When cool enough to handle, rub one side of each bread slice with the garlic clove. Place the slices, garlic side up, on individual plates.

Add the cheese to the fava beans and toss. Season to taste with salt and pepper. Spoon of the bean and cheese mixture onto each slice. Cover the bread slices with the fava mixture, dividing it evenly. Drizzle the oil over the tops and serve.
