Tomates A La Provencale

Tomatoes, Provencal style

Ingredients:
6 large, firm, ripe tomatoes
3 cloves garlic - finely chopped
2 tablespoons flat leaf parsley - chopped
5 tablespoons olive oil
Salt and freshly ground pepper
1 tablespoon sugar

Preheat oven to 425° F. Wash and halve tomatoes. Remove seeds.

Whisk garlic, parsley, and oil together in small bowl.

Lightly oil a baking dish large enough to hold the tomatoes. Place tomatoes, cut side up, in a lightly greased baking dish large that is large enough to hold all the tomatoes. Drizzle the oil mixture over the tomatoes then sprinkle with salt, pepper and sugar.

Bake the tomatoes for 1 hour. Serve hot.
