
Ingredients:
1-1/2 pound fresh string beans – washed and drained
1 cup vegetable oil
1 Tablespoon scallions - chopped
1 teaspoon garlic - chopped
1/2 teaspoon Szechwan chili paste or hot sauce
2 Tablespoon soy sauce
1 Tablespoon rice wine or dry sherry
1 Tablespoon sugar
Place a wok or large frying pan over high heat. Just before the oil starts to smoke add the beans (stand back to avoid being spattered with hot oil). Fry the beans, stirring constantly, until they are wrinkled and lightly browned. Remove beans with a slotted spoon and place on paper towels to absorb the oil. Set aside.
Remove all but 2 tablespoons of the oil from the wok. Return wok to high heat and add the scallions, garlic, and Szechwan chili paste. Stir-fry mixture for 20 seconds. Add soy sauce and stir another 10 seconds. Add the beans, wine, and sugar and stir-fry until well blended – about 1 minute. Remove from wok and serve.
