
Ingredients:
Rabanadas:
3 eggs
1 - 14 oz. can sweetened condensed milk
1 cup water
1 teaspoon vanilla extract
20 slices French bread - dry, day old bread
Sugar and cinnamon to sprinkle
Sugar Sauce:
1 cup water
3 cups sugar
5 whole cloves
zest of 1 lemon
To make rabanadas:
Set deep fryer to 330°F and let oil preheat.
Place the eggs in a shallow dish and scramble. In a separate shallow dish combine the milk, water, and vanilla.
Dip each slice of bread first in the milk mixture then in the egg mixture allowing the excess to drain off.
Place 2 to 4 slices at a time (depending on the size of the fryer) in the deep fryer and cook for about 5 minutes or until golden brown. Sprinkle with cinnamon and sugar and place in a casserole dish.
To make sugar sauce:
Place all ingredients in a saucepan over medium heat and whisk until boiling. Remove from heat.
Pour sugar sauce over rabanadas in casserole dish and let set a few minutes before serving.
