Pinto Bean Puree

(Tutu De Feijao)

Ingredients:
1-16 oz can pinto beans
1/2 lb of smoked sausage
1 cup of seasoned manioc flour (farofa)
2 tablespoons of olive oil

Place beans in a blender or food processor and blend until it becomes a creamy paste. If mixture is too thick to process all beans, add water.

Place a medium saucepan over medium-high heat and add oil. When oil is hot add the pureed beans and the seasoned cassava flour together, stir vigorously to avoid lumps. Add the sausage and stir until warmed through.

Place Tutu De Feijao in a serving dish and decorate with green olives and hard-boiled eggs placed on top.
