
Ingredients:
2 cups of black-eyed peas - soaked overnight (or use canned)
1 cup water
2 cloves of garlic
1 1/2 tablespoon ground pepper
1 teaspoon baking powder
1 teaspoon salt
Preheat deep fryer to 350°F.
Place all ingredients in a blender or food processor and blend for about 4 minutes or until it becomes a dough.
Drop dough by tablespoons into the deep fryer. Let dough balls cook for about 8 minutes or until dark red. Transfer to a paper towel covered plate and let excess oil drip off.
Stir the dough frequently to maintain consistency.
