
Ingredients:
½ cup dendê oil
1 onion - chopped
1/2 green pepper - chopped
2 cloves of garlic - chopped
4 ripe tomatoes - diced
2 tablespoon parsley - chopped
Salt to taste
3 pounds of cubed chicken meat
3 cups of water
2 lb dried shrimp - soaked overnight
1 lb roasted peanuts - chopped
½ cup coconut milk
Place a large frying pan over high heat and add dentê oil. When oil is heated add onion, parsley, green pepper, garlic, tomatoes, salt and chicken cubes. Stir-fry for about 15 minutes in high-medium heat or until chicken cubes are cooked.
Add water, shrimp, peanuts, and coconut milk. Simmer the stew for additional 15 minutes or until you get a creamy sauce.
Serve with white rice. Add pepper sauce if desired
