
Ingredients:
One chicken cut up into pieces
½ cup oil
2 onions - chopped
2 cloves garlic - minced
1 teaspoon annatto powder (known in Brazil as urucum)
1 tablespoon salt
2 cups water
½ cup parsley – chopped
½ cup green onions – chopped
Juice of 1 lime
Place a large sauté pan over high heat and add oil. When oil is hot add onion, garlic, annatto powder and stir to mix. Add the chicken pieces and fry for about 20 minutes or until done. Move the pieces frequently to cook evenly and allow the yellow color to cover chicken completely. Drain off the excess fat and return to heat.
Add the two cups of water, bring to a boil. Reduce heat then simmer for 10 minutes. Add the parsley, green onions, and the lime juice to the sauté pan and mix. Remove from heat.
Serve with white rice.
