Brazilian Rice

Ingredients:

3 tablespoons olive oil
½ cup onion - finely chopped
2 cups uncooked long grain, white rice
3 cloves garlic - minced
1 cup tomato - chopped
1 bay leaf
2 cups boiling water
½ teaspoon salt

Sauté onion in oil until browned. Add rice and garlic, sauté for 5 minutes. Add tomato and bay leaf and sauté for 3 minutes. Pour in water and salt. Bring to a boil, cover and reduce heat to low. Simmer 20 minutes or until rice is cooked.
