Rag Pasta with Herbs

Ingredients:

3 tablespoons olive oil
20 cloves garlic - peeled and minced
1 jalapeño pepper - chopped
½ cup onion - chopped
2 cups beef broth
2 tomatoes - sliced
1 tablespoon each: dried basil, tarragon, oregano
Fresh ground black and cayenne pepper to taste
4 cups cooked rag pasta*

Heat the oil in a large frying pan. Sauté the onion, garlic, and jalapeño pepper in the olive oil for 3 minutes. Add broth, tomatoes, and herbs and simmer for 20 minutes. Pour sauce over the pasta.

*Rag pasta is common in Australia. It is simply uneven pieces of flat pasta. Egg noodles can be used as a substitute .
